Honey Pecan Chicken Breasts

2 Boneless Skinless Chicken Breasts halved
1/4 tsp salt
1/4 tsp garlic powder
1/8 tsp pepper
1/8 tsp cayenne pepper
1 Tbsp butter
3 Tbsp honey
2 Tbs finely chopped pecans
Directions: pound chicken to 1/2 in thicken sprinkle with seasonings. In a large skillet, heat butter over med heat, brown chicken on both sides cover and cook until no longer pink (6-8 mins turning once) Drizzle with honey and pecans and cook covered until chicken is glazed (2-3 mins)

Chicken Burrito Skillet

  1 pound of boneless chicken breasts cut into 1 1/2 inch pieces

1/8 tsp salt

1/8 tsp pepper

2 Tbsp olive oil divided

1 c uncooked long grain rice

1 can 15 oz black beans rinsed and drained

1 can 14 1/2 oz diced tomatoes drained

1 tsp cumin

1/2 tsp onion powder

1/2 tsp garlic powder

1/2 tsp chili powder

2 1/2 c chicken broth

1 c shredded mexican cheese blend

1 med tomatoe chopped

3 green onions chopped

Toss chicken in salt and pepper and in large cast iron heat 1 tbsp oil and cook chicken until browned (2 mins) remove from pan.

In same pan heat remaining oil med high: saute rice until lightly browned 1-2 mins.

Stir in beans, tomatoes, and seasonings and broth and bring to boil. Do not stir rice and place chicken on top. Cover and simmer unti rice is tender and chicken is no longer pink. 20-25 mins

Remove from heat and sprinkle with cheese let stand until cheese is melted and top with tomatoe and green onion.

Peppernuts

2 cups Sugar
2 cups Syrup
1 cup Butter
3/4 cup Milk
1 tsp BS
1 Tbsp Vinegar
1 tsp cinnamon
1/2 tsp cloves
1 tsp nutmeg
8 cups Flour
Melt butter, mix sugar, syrup, butter and milk. Add BS and vinegar. Sift flour and spices and add to first mixture. Refridgerate for several hours or over night. Then roll into thin snakes and slice. Bake 375 for 8 mins.

1 Step
2 cups Rodger’s Golden Syrup (this is a syrup found in Canada not corn syrup)
2 cups white sugar
1 cup butter
1 cup milk
Combine the above ingredients in a saucepan and bring to a boil. Let the mixture cool completely before you do the next mixing.
#2 Step
In small bowl mix 1 egg
1 tsp. Vanilla extract
1.5 tsp. Peppermint extract
Set aside
#3 Step
In large mixing bowl
7 cups flour
½ tsp pepper
1- 2 tsp nutmeg
2- 3 tsp cinnamon
1-2 tsp cloves 2 tsp Baking Powder ¼ tsp salt Blend Step 3 and add Step 1 mixture dough will be sticky then add Step 2 And blend more refrigerate over night or for several days. Place parchment paper on cookie sheets. Roll dough pieces into ½ to ¾ snakes, cut into ½ inch pieces and bake at 350` F for 15 mins.

Easy Chicken Kiev

Ingredients:
3 large Chicken Breasts
2 eggs beaten
1/2 cup flour
2 cups Panko bread crumbs
salt and pepper to taste
extra light olive oil
Lemon-Herb Garlic Butter:
6 Tbsp butter room temp
1 large garlic clove minced
1 Tbsp lemon juice
2 Tbsp Chopped parsley
1/2 tsp salt and 1/2 tsp pepper
Instructions:
In bowl mix together all butter ingredients Using a sharp knife cut chicken breasts in half creating a pocket, DO Not cut through the back of breast. Stuff each Breast pocket with 1 Tbsp of butter mixture. Pinch to seal and season both sides of the chicken pocket. Dredge in Flour then dip in egg mixture and then finally in bread crumbs. Add oil to pan and once it is hot, add the chicken and fry to golden brown. Sprinkle with salt and parsley and squeeze lemon wedges over top and serve.

Pork Tenderloin With Honey Garlic Sauce

Ingredients
2 pork tenderloins
1/2 tbsp olive oil or butter
garlic cloves finey chopped
Pork Tenderloin Rub:
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp salt
1/2 tsp blak pepper
Honey Garlic Sauce:
3 tbsp cider vinegar
1 1/2 tbsp soy sauce
1/2 cup honey
Preheat oven to 180C/350F.
Mix sauce together.
Mix rub ingredients together and sprinkle rub on pork.
Heat oil add pork and sear. Add sauce and transfer to the oven. Roast 15-18 mins.

French Onion Soup

2 Quarts Water

8 cubes beef bouillon crumbled
2 large onions quartered and sliced
1 tsp salt
1 tsp ground black pepper
3/4 cup flour
1/2 cup water
1 cup heavy cream
1 1/2 cups Colby-Monterey Jack Cheese
In large pot bring water to boil, stir in bouillon cubes and let boil until disolved. Add Onions to water and reduce heat and simmer for 30 mins. Stir in salt and pepper and simmer 30 mins. Stir four into 1/2 cup cold water to make a paste. Gently whisk this mixture into th sou. Simmer 30 minutes more. Stir in Cream and cheese unti mixture is melted and heated. Thin with water if needed.

Lobster Bisque

 Small Onion Chopped fine

1 cup Chicken Broth
2 cups Heavy Cream
3/4 cup finely chopped Potatoes
1/4 cup finely chopped Celery
3/4 cup corn
1-2 cups lobster pieces
2 T Tomato Paste
1 T Worcester Sauce 
2 T Butter
2 T Flour
1/4 c finely chopped onions
Sauté chopped onions,  make a roux of flour and butter and slowly add the cream and broth.  Add Worcester and tomato paste and remainder of ingredients.

Crab Dip

Crab Dip
1/8 tsp garlic powder
salt and pepper to taste
8 ounce pkg of cream cheese
½ cup mayonnaise
½ cup sour cream
1 can crab meat
1 tablespoon lemon juice
dash of hot sauce
1 Tablespoon of Worcestershire Sause
½ teaspoon mustard dry or regular
1 – 1 ½ cups shredded cheddar cheese/ monetary jack work too
green onion chopped
½ cup parmesan/ Italian cheese mix
bake 350 10-15 mins

Pecan Chicken Breasts


Preparation Time: 15 min
Cooking Time: 30 min
1 cup buttermilk
1 large egg, lightly beaten
1 1/4  cup ground pecans 
1 cup fine, dry breadcrumbs or panco
2 teaspoons paprika
1 1/2 teaspoons salt
1/8 teaspoon pepper
1/2 cup all-purpose flour
8 boneless, skinless chicken breasts
1/3 cup butter, melted

Preheat the oven to 350 degrees.
Combine buttermilk and egg in a shallow dish.
 
Combine ground pecans and next 4 ingredients in another shallow dish.
 
Place flour in a third shallow dish; dredge chicken in flour.
Dip in buttermilk mixture; drain.
Dredge chicken in pecan mixture.
 
Place chicken on a rimmed baking sheet coated with cooking spray. Drizzle chicken with melted butter; sprinkle with chopped pecans.
Bake, uncovered, for 20-25 minutes or until done.

Thai Style Pork Chops

Dip pork chops in following mixture:
1/4 cup flour
1 tsp cumin
1/4 tsp cayenne
1/2 tsp salt
Cook in 2 T oil, fry until cooked through

Sauce:
1/3 cup broth
1/2 cup coconut milk
2 T peanut butter
1 T honey
1 tsp ginger
1/4 tsp salt
Cook until thicken add 1/4 cup chopped green onion, 1/4 cup chopped red pepper, 1/4 cup chopped peanuts, cilantro or lemon zest.

KFC (Kiss Fay's Cheek) Chicken Bowl

Oven fried Chicken Pieces in 425 degree oven on rake on baking sheet. 15-20 mins.
Cut Chicken into bite sizes for KFC bowl or use as chicken tender size.
Dip raw chicken in melted butter and then in following flour mixture
1 cup planko crumbs
1/2 cup parmesan cheese
1 tsp salt
1 tsp thyme
1 T basil
1 tsp Italian spice

Serve over mashed potatoes, corn and top with shredded cheese and gravy.

Big Soft Ginger Cookies

Favorite Christmas Recipe Exchange from Ruth Pysk

2 1/4 cups all-purpose flour
2 tsp. ground ginger
1 tsp. baking soda
3/4 tsp. ground cinnamon
1/2 tsp. ground cloves
3/4 cup butter
1 cup sugar
1 egg
1/4 molasses
2 tbsp. sugar

In a medium bowl combine the flour, ginger, baking soda, cinnamon, and cloves, set aside.
In a large mixing bowl with an electric mixer on medium speed beat butter for 30 seconds. Beat in the 1 cup sugar. Add egg and molasses; beat well. Stir flour mixture into egg mixture.
Shape dough in to 1 1/2 balls, using about 1 tbsp of dough for each. Roll balls in the 2 tbsp of sugar to coat. Place balls about 2 1/2 inches apart on an ungreased cookie sheet.
Bake in a 350 oven for 10 minutes or until light brown and still puffed. (don't overbake). Cool cookies on cookie sheet for 2 minutes, then transfer to rack and let cool.

Slow Cooker Chicken Stroganoff

Cubed Chicken
1/8 c Butter
1 pkg. Italian Style Dressing
1 8 oz. Cream Cheese
1 C Cream of Chicken Soup

Put Chicken and butter and dressing in Slow Cooker and cook on low for 5-6 mins
Add Cream Cheese and Soup Cook on high for 1/2 hr.
Serve over noodles

Teriyaki Sauce

Teriyaki Sauce:
1/4 cup soy sauce
1 cup water
1/2 tsp ginger
1/4 tsp garlic
5 Tbsp brown sugar
1-2 Tbsp honey
heat in a pan and add
2 Tbsp cornstarch
1/4 cup water mixed with cornstarch
Cook to thickened desire and refrigerate unused portion.

Pastry Cream

Pastry Cream
2 1/4 c milk
6 large yolks
2/3 c sugar
1/2 c corn starch
vanilla

boil milk and half the sugar
whisk yolks,sugar,and corn starch
Temper in milk to egg mixture and then put it back in the pot.
whisk continuesly for 3 mins to get the corn starch out.
place wrap over to keep from forming a skin and chill about 4 hours.
whisk a bit of sweetened cream and fold into (mixed) pastry cream.

Farewell to Mom

My mother gave me life, she taught me how to be creative while claiming she was not. She gave me a love of thunderstorms even though she feared them the most.
My mother showed me how to be a great April Fools baby as I learned from the multiple tricks she played on me how to get her back. She took the time to walk in the puddles and run through the sprinklers with me. She learned to swim the dog paddle with a grimace on her face just to prove she was up for adventure.

My mother could run circles around me and was an accomplished seamstress, gardener, farmer, professional teacher, business owner and cook. She clothed us with sewn outfits ranging from her suits, the baby clothes to our formal dresses and gowns. She fed us with foods grown in the garden, cooked elaborate dinners for friends and family all the while working on the farm, teaching school or ceramic classes in her home or at her shop in town.
There were never less then four kinds of cookies or squares in the freezer and on Saturday our house smelled of freshly waxed floors, the aroma of pot roast cooking on the stove and fresh buns baking in the oven.

My Mother graduated high school at the age of 16 and finished teacher’s collage at the age of 18 years and immediately was teaching grades 1 to 12 in a one-room schoolhouse. After marrying my Dad, she continued to teach periodically sometimes full time sometimes part time. She loved being an educator and loved working with children. My Mom and Dad had a great love affair. They never parted without a kiss. They worked together planting trees others believed they would never enjoy in their lifetime and made a home comfortable to raise their three children. They planted the garden together, grew fruit trees, had a dairy farm, beef farm, grain farm with Mom driving combine for the harvest.

Their time being active outdoors and enjoying all the seasons was interrupted when Dad became ill. They spent so many days and hours at the doctors and in the hospital and their lives changed drastically. Many times Mom felt like she could not go on, but Mom is the true example of a brave person. Not someone without fear, but someone who continued to strive on in spite of the fear. My mother had bible verses of encouragement and promises from God for every pain, every sorrow, every celebration and just daily life. She would sing all the time, as we shopped in the mall, drove in the car or worked together. As children we were awakened by her voice singing “good morning good morning its time to rise and shine.” Or on Sundays by a chorus she sang “Sunday school Sunday school good little girls go to Sunday school” or “Good morning merry sunshine”.

Mom and I worked together, when I was young she taught me how to cook, sew and plant a garden and then with Dad being sick it started with working on the farm together and later on teaching ceramics at the shop in town and in Rheinland school. It was during this time that she was diagnosed with Parkinsons. It became a struggle for her to sign her name and to write her notes on the blackboard. Medication helped at the early stages of this terrible disease, but ultimately it took over her life and changed the course of her life. Parkinsons brought dementia and decreased conversation and finally the nursing home care.

We shared so many special times together even after I moved to the states. Mom and Dad always loved to travel and take drives together. We had camped and explored much of Canada and the States as a family. We always talked even when we saw each other on a daily basis, there was always so much to talk about. We shared a special bond a mother and her oldest child. She was the greatest Mother and Grandmother to my children and I miss her….

Dutch Baby

Preheat oven to 450 degrees with cast iron skillet in oven
Beat
3 eggs and add-
1/2 cup milk
1/2 cup flour
dash vanilla
dash cinnamon
Mix together and remove skillet from oven
add 5 Tablespoons butter to hot skillet
and pour batter into skillet and bake for 20-25 mins.
Sift icing suger over Dutch Baby before serving with a little syrup.

Pasta with Shrimp in Tomato Cream Sauce

1/2 cup dried tomatoes packed in oil
1 clove garlic, minced
1 lb med raw shrimp (30-35 per lb)
1/4 cup thinly sliced green onions
1 1/2 Tab chopped fresh basil or 1 tsp dry basil
1/4 tsp white pepper
1 cup chicken broth
(3/4 cup dry vermouth opt.)
1 cup whipping cream or half and half
10 oz dry linguine or penne
grated parmesan cheese

Drain tomatoes, reserving 2 Tab oil, sliver tomatoes and set aside. Heat oil in wide frying pan on med-high heat and add garlic
and shrimp. Cook, stirring often. Lift out and set aside.
Add tomatoes, onions, chopped basil, pepper, broth, vermouth, and cream to pan. Bring to boil over high heat, boil stirring until reduced to about 1 1/2 cups (about 10 mins). Can add a little flour mixed with water to thicken at this point. Add shrimp to pan stir until heated.
Cook pasta, add shrimp topping with sauce garnish with basil sprigs and parmesan cheese to taste.

Cranberry Mousse

1 cup Ocean Spray® Cranberry Juice Cocktail
1 (3-ounce) package raspberry-flavored gelatin
1 (16-ounce) can Ocean Spray® Jellied Cranberry Sauce
2 cups frozen non-dairy whipped topping, thawed
Heat cranberry juice cocktail to boiling in a saucepan. Remove from heat and stir in raspberry gelatin until dissolved; transfer to a large mixing bowl. Using an electric mixer on high speed, beat cranberry sauce in a small bowl for 1 minute. Stir into gelatin mixture. Chill until mixture begins to thicken, but not set.
Gently mix in whipped topping, using a rubber scraper. Spoon into serving dishes or prepared pie shell. Chill until firm.
Makes 8 servings.
